Chocolate Pecan Pie with Homemade Bourbon Whipped Cream


This recipe is one of my hubby's favorites and his own mama has been making it for years. It's a yummy pecan pie with the addition of chocolate--how could you go wrong?!


What you'll need:

1 Pie Crust (9")
1 1/2 Cups Chopped Pecans
1 Cup Semisweet Chocolate Chips
1/2 Cup Granulated Sugar
1/2 Cup Firmly Packed Brown Sugar
1 Cup Corn Syrup (light or dark)
1/4 Cup Bourbon or Water
4 Large Eggs
2 Teaspoons Cornmeal
1/2 Teaspoon Salt
1/4 Cup Butter, Melted
2 Teaspoons Vanilla Extract


Place pie crust in a greased pie pan. I use the baking spray with flour in it. I also used a store bought crust but you can definitely use homemade! I like to double my pie crust recipe and freeze half for another day when I have the time.


Dump the chocolate chips and pecans into the crust.


In a small mixing bowl, whisk eggs, cornmeal, salt, melted butter and vanilla. Set aside.


Next, combine sugars, corn syrup, and bourbon in a saucepan.


Bring to a boil over medium heat and cook for 3 minutes, stirring constantly. You don't want this to burn, so don't stop stirring and set a timer!


Now you'll need to temper your eggs. To do this, slooowly drizzle in your syrup mixture into your egg mixture, whisking constantly. If you pour too quickly, the eggs may scramble!


Now pour your combined mixture over the pecans and chocolate chips and toss it all into the oven!


55 minutes later, a glorious chocolate pecan pie!


Looks a little naked doesn't it? We prefer homemade whipped cream, but there's absolutely no reason why you couldn't use store bought.

But if  you've never made whipped cream before, it's seriously the easiest thing ever.

Simply pour some heavy whipping cream into a mixing bowl with some vanilla extract, a pinch of salt, and a little powdered sugar. Beat until soft peaks form.

Overwhipped? Add a little more cream!

It's easy to make different flavors, too! I made bourbon whipped cream this time. Just add a splash of bourbon into your heavy cream before beating! You can also try chocolate by sprinkling in some cocoa powder.

  • 1, 9 inch Pie Crust

  • 1/4 Cup Bourbon or Water

  • 1/2 Teaspoon Salt
  • 1/4 Cup Butter, melted
  • 2 Teaspoons Vanilla Extract
Instructions
Preheat oven to 350 and place pie crust in a greased pie plate.Sprinkle chopped pecans and chocolate chips evenly onto bottom of pie crust; set aside.Whisk together eggs, cornmeal, vanilla, and salt in a mixing bowl; set aside.Combine sugars, corn syrup, and bourbon in a large saucepan; bring to a boil over medium heat. Cook 3 minutes, stirring constantly.Gradually stir about 1/4 of syrup mixture into egg mixture. Add this to remaining syrup mixture and pour into pie crust.Bake for 55 minutes. Pie should be jiggly but a toothpick should come out clean.

Fave Five Friday | We Moved!

We're finally moved in!

I'm SO happy to be in our new home and enjoying finally having all the main rooms unpacked and (semi)organized.

It's been crazy hot around here (like heat advisory hot) so we've done a lot of hanging out indoors. Today we're going to brave the park for a MOPS playdate!

Here's what my week looked like:


5.) Just a girl and her dog! She loves her "buddy" and loves going outside. I love how much personality she has and how she brightens every day with her silly attitude and happy smiles.

4.) Both kids napping simultaneously is a rare occasion these days, so when the opportunity presented itself the other day I took advantage of the quiet, alone time to relax with the newest issue of BHG!


3.) Since we missed celebrating Father's Day last weekend, we gave Preston a little surprise this week to thank him for being such a wonderful daddy. It comprised of his favorite chocolate pecan pie with homemade bourbon whipped cream (recipe for both coming to the blog soon!), a new tank from Target and a card scribbled in with love from Lucy :)


2.) Hold on...what? 2 months?! I think it physically hurts me to see him grow, but I love it at the same time. Is that crazy? I love seeing him smile and his personality starting to show, but I also love how bitty he is. It just doesn't seem real.

A Prayer for My Husband on Father's Day

It's Father's Day!

What a wonderful world we live in that there are specific days dedicated to people as special as our fathers. I am blessed to have been raised by a ridiculously patient, hardworking father who set an incredible example for me in a husband.

I am proud to say that my husband has some of the same qualities that I admire so much in my dad.




Since today is Father's Day and we just recently welcomed our second child into the family, I'd like to write a little prayer for my husband:



Lord, I pray for my husband today, that you would fill his heart with joy as he celebrates his second Father's Day. I am so grateful to you, Lord, for blessing me with my children and blessing my children with such a wonderful earthly father. Thank you for instilling in Preston a kind and patient heart, for leading him to me to truly be my better half. I pray that you will continue to guide him through his parenting journey, equipping him to lead his family and household in Your name. May his relationship with You strengthen daily, so that he may continue to know You and be an example to his children. I ask Your blessing on Preston, today and every day, for him to grow closer to You and have a peaceful heart. I also pray that You will lead me to be a Godly wife. Help me to appreciate and encourage him and respect and love him. Please bless our marriage, Lord, so that it will be a strong foundation for our family, a Christ-like example of intimacy for Lucy and Parker.

Thank you, God, for blessing Preston and I with our beautiful babies, for trusting us to care for Your children. I pray that they may know how much they are loved by an awesome God and that we as parents will be a reflection of that love and grace.

Fave Five Friday | Closing Day!

Hooray hooray! It's Closing Day!

Happy Friday, y'all!

It's been a whirlwind week of final paperwork, a hubby working late (great timing), packing boxes and sorting and pitching junk. All in preparation of moving day!

We were originally supposed to close on Wednesday, but paperwork wasn't quite finished, so today it is! It's a bummer but I'm looking forward to getting into the new place.

Did I mention we're moving in tomorrow?! Ha! We can't wait!

Fave Five Friday | Motherhood Woes

TGIF!

It's going to be a scorching weekend here in St Louis...100 degrees on Sunday! I'm not sure if that makes me want to get out of the house or never leave it.

5.) It's been a boring week in the Klee household, gearing up for moving day! I'm so excited to be closing on our first house next week! I'm not looking forward to the packing process, however. My plan is to pack everything a couple days before we move so that I don't have to live out of boxes in the meantime. Maybe that'll keep me out of the crazy hot outdoors until we get our pool ;)


4.) Speaking of those summertime temps, I've been dreaming of a trip to the beach. I lived in Florida briefly several years ago, and while I never want to live there again, I sure miss the ocean and the beautiful scenery.
